The American Culinary Federation (ACF) is the largest chefs’ organization in North America. The organization, which was established in 1929, currently features more than 22,000 members in 230 chapters across the U.S. Basically, they’re the iron fist of cooking in the U.S. – in a good way, of course. The organization itself is a member of the World Association of Chefs Societies.
The aim of the ACF is to enhance and promote culinary education, apprenticeship, and certification for chefs. All of this is done with the best interests of culinarians. The ACF holds various culinary competitions throughout the year, in which students and professionals engage in food preparation-related challenges. Many of these competitions are single events within ACF chapters, but there are some competitions that can see a person advancing to national competitions, which climax at the finals at the ACF National Convention.
Getting certified by the ACF provides several benefits for professional chefs. First off, it helps differentiate chefs who have demonstrated their abilities, knowledge, and education before the ACF from those who have not. An employer is much more likely to hire an individual who has received ACF certification than one who has not. ACF certification is now seen as a standard for excellence in the culinary industry. The certification process entails both formal classroom instruction and hands-on training.
Individuals interested in receiving ACF certification will be asked to demonstrate their…
• skills and culinary expertise
• knowledge of culinary nutrition and food safety and sanitation
• understanding of the culinary supervisory management
• understanding of the importance of high standards for food preparation
• ability to take charge of your professional development and culinary career
When an employer sees that a chef is ACF certified, they can rest easy knowing that they possess all of the above abilities and will serve their restaurant well. The ACF offers certification in:
• Certified Culinarian
• Certified Sous Chef
• Certified Ched de Cuisine
• Certified Executive Chef
• Certified Master Chef
• Personal Certified Chef
• Personal Certified Executive CHef
• Certified Pastry Culinarian
• Certified Working Pastry Chef
• Certified Executive Pastry Chef
• Certified Master Pastry Chef
• Certified Culinary Administrator
• Certified Secondary Culinary Educator
• Certified Culinary Educator
They even offer membership for non-professionals through their Culinary Enthusiast program. This program is designed especially for non-culinary professionals who have a strong passion for the culinary arts. Being a member of the program provides individuals with culinary news, discounts on products and services, invitations to culinary events, and access to culinary professionals.
