FAQ Definition Commercial Kitchen: Cooking Station Versus Line

What is a cooking station?  It’s part of the kitchen that is dedicated to a particular cooking technique.  IE:  Grill station:  where all grilled steaks and veggies are prepped.  A station is not what type of food is prepped there but more what type of preparation and cooking technique is being applied in that area.

When you are thinking about a station, let’s think about shrimp.  They can be prepared a variety of ways so you could broil, bake, sautee, or grill them.  Same raw ingredients but prepared in different stations in the commercial kitchen.
