Poisonous/Toxic Foods We Eat Every Day

Yes, that’s right, chances are pretty good that you’ve eaten something potentially poisonous today… But that’s ok, because most of us do it EVERY day! The following is a list of ten common foods that can be poisonous or toxic – so eat with care!

10) Mushrooms. The world consumes a tremendous amount of these delicious fungi, and the vast majority of them are perfectly fine to eat. Around 5% of them, however, are toxic – some are actually quite deadly.

9) Rhubarb. The green leaves of the rhubarb contain oxalic acid, which is known to cause kidney stones and, in high enough doses, death.

8) Kidney Beans. Kidney beans contain the toxin lectin, which can cause severe vomiting and diarrhea. It can take as few as three uncooked beans to cause these symptoms. The good news, however, is that the cooking process eliminates the toxin.

7) Apples. Apple pips (apple seeds) contain small amounts of amygdalin, a cyanide and sugar compound that becomes hydrogen cyanide (a deadly toxin) when metabolized. However, the poison in encased in the hard outer shell of the seed, so a whole seed inadvertently swallowed is unlikely to release its toxin. Additionally, the amount of seeds that would need to be chewed up and swallowed to cause a lethal dose is very high, so unless you are sitting down to a full bowl of apple pips you will be fine.

6) Tomatoes. The area near the stem and leaves contains the toxin tomatine, which is used in pesticides. Again, however, the amount that would need to be consumed in order for it to be dangerous to a human being is very large.

5) Potatoes. Green potatoes have high levels of glycoalkaloid poison, which, in high enough doses, has been known to kill.

4) Cherry seeds. Like apple seeds, these contain a cyanide compound that could cause illness or death if enough of them are consumed.

3) Brazil nuts. These are the most radioactive of all foods, containing 1,000 times more radium than almost any other common food. This amount is still relatively very small, and most of the radium is not retained in the body.

2) Nutmeg. A known hallucinogen, nutmeg is known to cause “nutmeg psychosis” in high doses.

1) Pufferfish. Improperly prepared, pufferfish can lead to paralysis and death. That’s why chefs train for several years before they are certified to serve the dangerous delicacy. Despite the heavy regulation and vigorous training, however, there are still reported incidents of pufferfish poisoning each year.

Well, there you have it – a smorgasbord of potentially poisonous provisions. Open a Bar: The Equipment You Need

It’s always a good time walking around the warehouse at One Fat Frog and put together my mental shopping list of the equipment I need to open my dream bar. I’m thinking of calling it The Bar Review…or not. I can tell you this, when I do open my bar, I know what I need equipment-wise, and here’s that list you need to know too.

-Kegerator (either built-in taps that are put in the walls or a stand-alone unit)
-Bottle coolers (keep your beer bottles cold)
-Ice Machine (you need ice)
-Ice Bin (filled with ice behind the bar)
-Refrigerators (for extra inventory)
-Three compartment sink (for cleaning glasses; bars typically wash glasses by hand)
-Dishwasher (may not need it, but you’re welcome to it if you want)
-Speed wells (holds liquor bottles)

That’s the big stuff. Of course, there are some little things that you want as well:

-Different types of glasses (there are more than beer mugs or pint glasses)
-Pour spouts (help prevent overpouring)
-Shakers, strainers, muddlers
-Knives (for cutting limes, lemons, and other garnishes)
-Garnish trays

Some bars also sell food. The types of food you choose to sell will more specifically determine more about what kinds of equipment you’ll need. Here’s some quick basic things you might look at:

-Freezers and refrigerators (must keep food good)
-Range/Oven
-Flat griddle
-Fryer
-Prep table

Again, with the cooking equipment, some bars don’t do food, some bars don’t have the space, but it’s worth looking at. Jacksonville Launches Unique Social Media Campaign for Community Improvement

Mayor-Launches--More-of-This,-Less-of-That--CampaiYesterday One Fat Frog Restaurant Equipment discussed the JAX2025 community initiative in Jacksonville, Florida. Following up on that community-driven movement, Jacksonville Mayor Alvin Brown announced the “More of This, Less of That” campaign. The idea behind it is to have residents take and share photos concerning what they believe Jacksonville does well and where there is room for improvement.

This social media campaign is intended to be an easy way for residents to communicate with the city of Jacksonville while they share ideas on improving the community in a unique and visual way.

The Mayor is asking residents to post photos to Twitter or Instagram containing the hashtag #MoreofThis for places, events, initiatives they wish to see more of. For subjects they believe should be improved or done away with, residents can use the hashtag #LessofThat. Participants can post their photos on the City of Jacksonville’s Facebook page or email them to More@coj.net or Less@coj.net

Selected photos will be added to Jacksonville’s Pinterest page and shared throughout the city’s other social media accounts.

Mayor Alvin Brown stated that the campaign is a user-friendly way to share their opinions about Jacksonville.

Restaurant Trends, Part 10

Well, we’ve finally come to the end of our 10-part series on current restaurant and dining trends. The One Fat Blog hopes you have enjoyed it, and that perhaps you’ve found a little inspiration for your food service business.

10) Fermentation. While fermentation itself is certainly nothing new (humans have been doing it for some 8,000 years, and it has occurred naturally since the beginning of life on Earth), some creative and adventurous restauranteurs have taken the process to new heights.

Basically, fermentation is the process of converting sugars into alcohol and/or organic acids, under anaerobic conditions. Carbon dioxide is also usually produced. To enable this conversion, microorganisms such as yeasts or bacterias are often used. Common fermented food products include beer, wine, kimchi, cheese, yogurt, and many more. Chances are you’ve eaten something fermented already today…

These traditional, “common” fermented foods and beverages, however, are not what we’re talking about here today. No, the new trend we are discussing includes things like the aged salt beef (fermented for two months) at Nightwood in Chicago, which has a prosciutto-like “funk,” and adds a complex, savory flavor to dressings and sauces. At McCrady’s in Charleston, all manner of foods are finding their way into the fermentation vats – from hot sauces to vinegar made from Mountain Dew. Momofuku in New York, meanwhile, is concentrating on the traditional Japanese fermented dish miso, using different microbes and different fermentation times to give their plates unique flavors. And, after all, the end result is always to create something delicious…
